Recipe
INGREDIENTS
- 4 cups full-fat plain Greek yogurt
- 8 garlic cloves, peeled and minced
- 2 English cucumber, grated (about 2 cup)
- 2 tablespoon chopped fresh (dill/ mint)*[optional if making regular Tzatziki]
- 3 - 4 tablespoons fresh lemon juice, to taste
- 2 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon freshly-ground black pepper
INSTRUCTIONS
- Stir all ingredients together until combined. Taste and adjust seasoning if needed.
- Serve immediately, or refrigerate in a sealed container for up to 2 days.
- Tip:
- Use seedless cucumber or if you’re using seeded one, make sure to remove the seeds. Cucumber seeds bring along a lot of moisture. Try to remove as much moisture of the pulp as possible.
- Use minced garlic not grated or chopped in order to remove lumps and a mouthful of garlic.
- Use Greek strained yogurt for that velvet and rich texture, as it is smoother and creamier than other yogurts and make sure it’s cold.
