BAKED VEGETABLES SKEWERS 




It's a crucial time for all of us. We must take care of ourselves and the dear ones. Since we are instructed to avoid going out and eat outside food, I’m bringing the restaurants inside my house. So today I’m sharing these amazing baked vegetable skewers!



These colorful vegetable skewers are perfect on the grill or baked in the oven. So versatile, easy and fun to prepare and perfect for summer outdoor meals or barbecues. Pick any vegetables of your choice. Cut them into nice big chunks and marinate for 30min, then bake and it’s done. Yeah...that easy!😄 Add tofu or cottage cheese to the recipe for added protein. It’s always good to add protein in your meals but I’ve been eating that a lot lately.. I’m not using it in this recipe. But if you’re using the tofu/cottage cheese it had to be baked beforehand so that it just crisps up perfectly with the other veggies on the skewer instead of cooking from scratch.

Recipe 


Preparation  15 minutes 

Cooktime  20-30 minutes 


Ingredients 

 Choice of vegetables 

  • 150 gms Baby potatoes (Partially boiled & peeled)
  • 150 gms Mushrooms 
  • 150 gms Broccoli 
  • 150 gms Mixed bell peppers
  • 150 gms Red onions 
  • 70 gms Cottage cheese (optional)
  • 100 gms Zucchini


 Marination

  • 270 gms Greek Yogurt
  • 2 tbsp Roasted gram flour
  • 1 tsp Turmeric powder
  • 2.5 tbsp Red chilli powder
  • 1.5 tsp Hot spice powder(Garam masala)
  • 1.5 tsp Ginger garlic paste
  • Salt to taste
  • 2.5 tbsp Mustard oil
  • 1 tsp Roasted Crushed coriander seeds
  • 1.5 tsp Chaat masala

Garnish

  • Coriander leaves
  • Onion slices
  • Lemon halves


Directions

  1. Preheat oven to 400F.
  2. Cut the vegetables into large chunks.
  3. Soak those wood skewers for 1 hour before cooking otherwise they will burn.
  4. For Marination, In a bowl add yogurt, roasted gram flour, turmeric powder, red chilli powder, hot spice powder, ginger garlic paste, Mustard oil, roasted crushed coriander seeds, chaat masala, salt to taste and mix it well.
  5. Add the vegetable chunks into the bowl, mix nicely and let them marinate in the fridge for about for 30 minutes.
  6. Alternate between the different vegetables, leaving a small space between each- fortunately, onion and bell pepper have natural curves to them, preventing the vegetables from laying flatly on one another.
  7. Try to place vegetables with similar cooking times together on the same skewer.
  8. Roast the vegetables on the skewers, cook for 20-30 minutes. Don’t be scared of a little browning or charring around the edges. But, don’t let it take over.
  9. Garnish with coriander leaves, onion slices and lemon halves.
